Vegan Gluten Free Apple Cinnamon Muffins



As someone dedicated to the principles of the Medical Medium protocol, I'm always searching for delicious, satisfying recipes that align with a clean, natural-sugar lifestyle. Finding baked goods that are both vegan and gluten-free, and use only natural sugar, can be a challenge. But I've perfected a recipe for Apple Cinnamon Muffins that hits all the right notes: moist, fragrant, and free from eggs, dairy, refined oils, and refined sugar.


Ingredients

Here's the full list of ingredients for these muffins:


Dry Ingredients:

  • 1 cup oat flour
  • 3/4 cup coconut sugar
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp cinnamon
  • a pinch of salt


Wet Ingredients:

  • 1/4 cup organic apple (blended into a smooth puree)
  • 1/4 cup + 2 tbsp oat milk


This recipe makes approximately 4-6 muffins.


Directions

The key to light and fluffy muffins is properly separating the wet and dry ingredients before combining them.


Step 1: Prep & Preheat

Preheat your oven to 350°F (175°C). Line a muffin tin with liners or grease it well (possibly with avocado oil spray or vegan butter).


Step 2: Combine the Dry Ingredients
In a large bowl, whisk together all the dry ingredients: oat flour, coconut sugar, baking soda, baking powder, salt, and cinnamon. Ensure everything is well combined for an even rise and flavor in every bite.


Step 3: Combine the Wet Ingredients
In a separate medium bowl, mix your blended organic apple puree and oat milk.


Step 4: Combine the Mixtures
Pour the wet mixture into the dry ingredients. Use a spatula or a whisk to gently fold the ingredients together until just combined.


Step 5: Fill the Tins & Bake
Divide the batter evenly among your prepared muffin cups. Use an ice cream scoop to pour the batter and fill at least 3/4 of the cups.

Bake at 350°F for 20-22 minutes, or until a toothpick inserted into the center comes out clean. Please note if you double or triple the recipe it can take up to 24 minutes.


Step 6: Cool Down
Remove the muffins from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
